What is the purpose of why you need to boil the sugar with water before putting it in hummingbird feeders? “I know someone who does not, and are about 30 during the summer that are fighting over it. How can I get my hummingbird feeders to work?

I have several hummingbird feeders that allow access through a red rubber stopper at the end of the glass tube slightly bent. The tube is filled with about 50% with connector, and then there is a large air bubble. After the birds drink the connector into the tube, the bubble prevents multiple connectors to flow downward. How do I overcome this?
